Coconut Lemon Bundt Cake



This was from Veganomnicon... a very excellent cookbook from Isa Chandra Moskowitz and Terry Hope Romero. I was worried about it being too lemony, but I could have added even more lemon juice to this and would have loved it! (next time, I will add more!)

I ran out of powdered sugar for the top, but this was good just as is!

    I love lemony desserts and they are rarely too lemony for me LOL

  2. Coconut lemon!!! What a great combo! That looks so good! I made vegan cookies for Easter (Steve's friend that came over is allergic to eggs) and I swear they are better than regular cookies. Oops, sorry...they were not truly vegan as I did use chocolate chips (milk chocolate). But I'm sure they would be just as good with carob chips.
